Apple Cinnamon dessert Pizza with Oats streusel and a Salted Caramel drizzle

 This whole week just whizzed past in a blur with my niece’s big fat Indian wedding in Mumbai, a three day extravaganza. My younger one who had never witnessed a Wedding was full of excitement and vigour finally coming to the conclusion that weddings are boring and meh. For me more than the marriage meeting my paternal cousins and relatives after a really long hiatus lured me to Mumbai. It was a huge family reunion and a truly wonderful nostalgic experience that I will always cherish.

 

 

As I unpacked after returning home it hit me suddenly that it was already weekend and the Foodie Monday Bloghop theme was Pizzamania for which I had not bothered to think and decide with the reunion memories still clouding my mind. As I racked my brains I decided to go for a dessert pizza for its uniqueness and because my friends call me The Dessert Queen. Yes… making some new kind of Dessert gives me a real high.

 

As I googled for a dessert Pizza I couldn’t believe my eyes, the Internet was flooded with loads of them. As I zeroed down on an Apple Cinnamon Streusel Pizza, I could taste the sinful dessert in my mind. I planned to drizzle it with salted caramel sauce as apples, cinnamon and caramel are made for each other, they compliment each other so well.

Streusel is a crumbly topping of flour, butter and sugar that’s baked on top of cakes, pies, muffins etc which originated in Germany and the name translates “to strew or to scatter”. Normally spices, nuts, coconut and oats are added to the flour mixture. Streusels always have a higher content of sugar than flour resulting in a more granular texture and this ratio separates German streusel from a crumble.

 As for the pizza dough, this is a tried, tested and a full proof recipe which rises perfectly and I have been using it for my pizza bases since the day I have stumbled upon it. I mostly make a thick crusted Pizza base as my kids love it that way. The recipe asks to make it 1/4 inch thick for a medium crusted pizza. The rest time is 20 minutes to 30 minutes for the dough which makes it really fast for a pizza.

Instructions
  1. For the pizza crust mix warm water,sugar and yeast and keep it aside for 5-10 minutes.After 10 minutes when the mixture has become frothy add it to the flour and salt and knead it for 2-3 minutes to a smooth dough.Cover and keep it to rest for 20 minutes.
  2. For the Apple topping add butter to a heated pan, sautxe9 the apples in butter till a little soft, finally add the cinnamon and sugar and cook till tender and not mushy for 4-5 minutes.
  3. For the Streusel mix the flour,oats,sugar and softened butter and incorporate the butter with your fingers or a pastry blender till the butter is equally distributed in the mix and crumbly.
  4. Now roll out the pizza dough to a 16 inch circle or spread it with fingers in a 16 inch greased pizza pan. The dough should be 1/4 inch thick.
  5. Layer the pizza with the cooked apples first, it won't cover the whole base,just equally distribute it to cover the dough.
  6. Now sprinkle the streusel topping equally covering the base and leave it to rest for 10 minutes for it to puff up slightly. Meanwhile preheat the oven to 200 deg C.
  7. Bake the pizza for 15-20 minutes or till the sides are brown and the topping is hot and little bubbly.
  8. While the pizza is baking make the salted caramel sauce for the drizzle. Heat the sugar in a saucepan on medium heat .Keep stirring till the sugar melts and becomes clumpy and Amber coloured.
  9. Add the butter stirring constantly and cook for 2-3 minutes till the butter has melted.
  10. Remove the pan from heat add the cream in a slow stream stirring vigorously and once mixed put it back on the flame.Let it boil for a minute,switch off the flame and add the salt and mix. Once cool can be stored in the refrigerator for upto 2 weeks.
  11. Let the pizza rest for 10 minutes before drizzling the sauce on it or you can drizzle the glaze on individual pieces before serving. Serve the pizza warm.
