Since man inhabited the world Coconut trees were in existence. The Coconut tree or palm is highly valued as a source of food as well as medicine and is called the “Tree of life” and no part of the tree goes waste. The versatile coconut provides a nutritious source of meat, juice, milk, and oil that has fed and nourished populations around the world for generations. Coconut reigns supreme in the coastal cuisine of India in the form of sweet meats, desserts, curries, drinks either as a main ingredient or as a flavouring .

I have to think twice before I buy Coconuts as I am the only one who is a sucker for coconuts in the house, the rest three don’t acknowledge the fruit at all. But somehow that hasn’t stopped me from indulging myself occasionally with some of my favourite coconut dishes. The best part is I don’t have to share those treats with anyone and the downside is I am sometimes too lazy to cook or bake just for myself, so finally end up cooking or baking dishes with coconuts very rarely.

 

 

When the theme for the 56 th Foodie Monday Bloghop was decided as Coconut I instantly knew what I had to cook and share with you all. This fried rice in South Indian style is one of my favourites and I am sure anyone who’s a lover of this coastal, versatile fruit would fall in love with this dish. A perfect dish for a lazy weekend or a day when you have less time at hand and a great recipe to use leftover rice. Serve the finger licking good rice with a raita of your choice with pickle and papadums.

 

I have been preparing this rice dish for the last 5-6 years, basically since the day I saw it in my blogger friend Dhivya Karthik’s blog Chef in You . Well I was also into blogging then, those few months and had to leave my space sad and forlorn due to other priorities . Thank God I am back into what I love the most.

 

 

Today being Ganesh Chaturthi and coconut being used for religious and auspicious ceremonies this is an apt dish for today when lot of people prefer to eat dishes without onion and garlic. Instructions
  1. Heat the ghee in a pan or a wok. Add both the dals, the Bengal gram and the black gram and let them turn light brown in low flame.
  2. Now add the mustard seeds and once they start popping add the asafoetida, curry leaves ,chillies and cashews.
  3. Once the cashews have browned add the grated fresh coconut and salt and saute in low flame for 7-8 minutes or till the coconut is light brown and looks toasted.
  4. Finally add the cooked rice and mix well and switch off the flame.
  5. Serve hot with raita, papad and pickle or just enjoy as it is.
