Colourful Swirl Mathri….colours of Holi

 

Bura naa maano Holi hai…it’s a phrase to justify the mischiefs that people play on others on Holi.Oh ! how as kids we used to enjoy the festival of colours, dousing each other with buckets of coloured water, throwing water balloons at people passing through our street and then running and hiding behind trees, aiming water guns and pichkaaris filled with coloured water on our neighbours and that special annoying uncle who used to talk to us rudely all year round. Holi somehow was the day to take vengeance on him because we knew we can play any kind of prank and get away with it. For me Holi conveys love for all and joy.

Holi is not only about the Gulaal and pichkaris which bring vibrant colour in our lives but what makes the day extra special is the delicious spread of Holi dishes which is typical of any Indian festival.Talk of Holi celebrations and we can think of Gujjiyas, Mathris, Masala kachoris, Dahi vadas, Malpuas, Bhaang Pakore and of course Thandai.

 

 

This time as I looked for colourful recipes for our 32nd Foodie Monday Blog Hop as the theme is Festival of Colours , I came across this colourful swirl Mathri recipe from a fellow blogger, Madhulika Vatsal and I knew I had to try these and blog about it.The swirl of colours make it a perfect Holi namkeen recipe.The link below is a video which shows her making these swirl Mathris making it easy for us to know the procedure.

Ingredients

Instructions
  1. In a bowl mix the flour,salt, carrom seeds and salt and mix it properly.
  2. Add the oil to the flour mix and incorporate it nicely with your fingertips till it resembles breadcrumbs.
  3. Add little warm water and knead it to a tight ,tough ,smooth dough.
  4. Divide the dough into 3 equal portions and add the red and green food colouring each to two portions and knead it properly so that the colour gets incorporated making it a green and red coloured dough.keep all the 3 portions covered for 10-15 mins.
  5. After 10 mins roll out all 3 doughs into 8" roundels, keep all the 3 roundels on top of each other ,alternately brushing each roundels with water before positioning it on top of the other according to the colours you want in your swirl and roll it out again together to a 10 inch roundel.
  6. Roll carefully into a cigar shaped roll brushing a little water at the end so that it sticks properly.
  7. Finally cut the roll into thin slices .
  8. Meanwhile heat the refine oil for frying in a wok, fry the dough slices 5-6 together in a medium sized wok for 5-6 minutes in medium low flame till they are cooked properly.
  9. The Mathris are little soft when straight out from the oil when hot but turn nice and crisp after they turn cool.
