Gingerbread Man Linzer Cookies

Here is a recipe of Easy Austrian Linzer Cookies or Almond wafer Cookies filled with Jam in the shape of Gingerbread man,a hit with kids as well as adults!

From Chocolate to Peanut butter, from sugar cookie to snicker doodles I find home made cookies baked from scratch the most comforting and satisfying. And there is nothing like a batch of homemade cookies to lift your spirits and make your house smell wonderful. Well with Christmas knocking at the door it’s time to kick baking season into high gear.

And with the 70 th Foodie Monday Bloghop theme being Cookies I decided to bake these Linzer cookies in the shape of Gingerbread men. Whether you are baking for an office party, Christmas get together or a birthday these cookies are a rage.These jam filled, vanilla almond wafer cookies with a hint of lemon and sprinkling of sugar powder ….a sublime combination of nut laden pastry and preserves and a hit with kids as well as adults.

 

 

Gingerbread Man Linzer Cookies

 

Originally from Linz, Austria and known as Linzer kekse, traditionally Black currant jam is sandwiched in between the buttery cookies. But you can use any flavour you like. I used some mixed fruit jam which is found in every Indian kitchen. These delicious cookies call for Almond flour, Almonds can be used blanched or with skin and toasted before you powder in a food processor to bring out their full flavour.

Instead of Monday I am posting on a Tuesday as yesterday was my little ones 8 th birthday and I was busy with her party. Its as if my little pumpkin was born yesterday, how time flies. Though my little girl has grown out of my lap but will be in my heart forever. Sharing with you all a princess doll cake for that I baked for her matching with her dress.

Ingredients

Instructions
  1. Toast the almonds in a preheated oven of 180 deg C for 8 - 10 minutes and once cooled process them to a fine powder in a food processor with 1 tbsp sugar from the 1/3 cup sugar mentioned.
  2. In a bowl mix the flour, cinnamon, lemon zest and salt and keep aside.
  3. Beat the butter and remaining sugar with a hand mixer till light and fluffy.
  4. Add the vanilla extract and the egg yolks and beat.
  5. Beat in the almond powder and the flour mix till a dough is formed.
  6. Wrap the dough in a cling film and refrigerate till firm or for 1 hour.
  7. Preheat the oven to 180 deg C and grease a cookie sheet or line with butter paper.
  8. In a lightly floured surface roll out the dough till 1/4 inch thick and with a gingerbread man cookie cutter cut out the shapes and lay it on the cookie sheet.
  9. Take a small heart shaped cookie cutter and cut out centers from the half of the cookies on the sheet.
  10. Bake for 10 -12 minutes or till the edges turn light brown.
  11. Repeat the process with the rest of the dough till the dough finishes.
  12. Once the cookies are cooled dust the cookies with the heart cut outs with some icing sugar .
  13. Whip your choice of jam with a small whisk and apply a thin layer of jam on the full cookies. Place the cut out cookies on the full cookies and gently sandwich them together.
  14. Using a small spoon or piping bag fill the cut out with a little more jam.
  15. If you want the cookies to be crisp then assemble them the day of serving. Assembled cookies can be kept in the refrigerator in an airtight container for a few days.
