Lobia Chaat/ Black eyed peas Chaat

The first week of this month I was in Bangalore with the kids, holidaying with my sister and her family and my parents who had come to spend some time with them. The kids had a gala time having fun bonding with the grandparents and created some lasting memories. My mom was not keeping well since the last few days, so we managed some action packed hospital rounds and a few important health check ups in between the fun packed get together. Unfortunately my mom was diagnosed with Diabetes and with the lifestyle disease came a lot of Dos and Don’t s by default.

It was overwhelming for her and for all of us. For a person who was active everyday of her life, always on her toes taking care of the family, the house and a college job to attend to, it was traumatic for her. It was time to come to terms with the reality and boost her confidence and morale, so we sisters sat down to jot a healthy meal and exercise plan for her and thus started our fight against the metabolic disease and it’s repercussions.

Within my stay I started making lots of salads for her which was supposed to satiate her hunger in between the small low sugar meals as well as had to please her tastebuds. Her favourite is the boiled Lobia or Black eyed peas I used to make for her like an Indian Chaat with Coriander and Tamarind chutney and a mix of chopped onion and tomatoes with a sprinkling of Chaat Masala. This Chaat is a protein and fiber packed Salad which is not only delicious but a bonafide belly flattener too.

My sisters pantry was stocked up with all varieties of pulses and dals that I could think of, which made easy for me to rustle up some healthy stuff for my mom. Loved the way she manages her household although being a working mom. I noticed that she has made her life simpler and easier by ordering all her grocery online which includes dals, pulses, cut vegetables, organic fruits etc from the online shopping and grocery store Big Basket. Ingredients

Instructions
  1. Wash and soak the lobia for 3-4 hours or overnight.
  2. Pressure cook the lobia for 10 minutes or till boiled with a little salt.
  3. Meanwhile chop the onion, tomatoes, cucumber, green chillies and coriander.
  4. Strain the boiled lobia (use the lobia water to knead your chapati dough or just use it in your daal) in a bowl .
  5. Add all the chopped veggies, chutneys, lemon juice and the chaat masala. Add less salt if you are using chaat masala to season it.
  6. Serve sprinkled with chopped coriander and enjoy.
