No Bake Leftover Pasta Frittata

No Bake Leftover Pasta Frittata

 

When your refrigerator is full of leftover food from the previous days lunch or dinners or parties then there is no point cooking fresh meals and letting the leftovers go waste. Rather there are lot of options to use them to create some surprising and delicious new dishes.

In my kitchen the leftover dals go in the Paratha dough to make some nutritious Dal parathas, left over idli and dosa batter is made into Masala veggie Paniyarams, leftover idlis make awesome Masala idlis and idli Manchurian, Old Chapatis are turned into oriental style chapati noodles, stale bread make soft and creamy Caramel Bread Pudding and so on.

Last week my fridge had leftover Mac and Cheese from the previous day’s dinner and with the 142nd Foodie Monday Bloghop‘s theme being Cooked Leftovers I decided to give the Mac and Cheese a new makeover ….a A Pasta Frittata. Frittata is an egg based Italian dish resembling an omelette or a crustless quiche, enriched with extra ingredients like veggies, cheese and meats.

So get creative and add any Pasta like spaghetti, Macaroni, Penne with any type of sauce like Carbonara or Arabiatta or Pesto.The Pasta gives body to the Frittata but too much of sauce will not help the Frittata to hold together. Throw in some veggies, bacon, sausages and some fresh herbs for flavour. I used some Spinach, Mushrooms, Cherry tomatoes and Sundried Tomatoes with dried mixed herbs and a handful of Cheddar Cheese to the eggs and leftover mac and cheese and made it on the stove top.

Instructions
  1. In a pan heat the olive oil, add chopped garlic and onion and sauté till they turn transparent.
  2. Add the spinach and sun dried tomatoes and sauté for a few seconds.Add the Mushrooms and cherry tomatoes ,sauté till they get half cooked .
  3. Add the salt,pepper and dried mixed herbs to the veggies,mix and add the pasta.
  4. In a separate bowl beat the egg, milk and little salt till the mixture becomes nice and airy.
  5. Pour the egg mix into the pan distributing it equally through out the pan, sprinkle the grated cheese , cover it and cook it on low flame for 10 minutes.
  6. Check if the top layer is cooked and the egg looks set. If you want a brown crust then slide the Frittata carefully on to a plate and flip it back into the pan with the top side facing down , let it brown for 3-4 minutes.
  7. Cut the Frittata into wedges and serve with bread.

Can the Frittata be baked?

Another alternative is to bake the Frittata in a pie dish or a oven proof frying pan at 180 deg C for 10 mins or till the egg on the top is set and lightly browned.

  • Wow Saswati a nice different kind of frittata. I usually wouldn’t have any leftover pasta as hubby would finish all of it! Perhaps would have to save a bit to make this delicious looking breakfast dish.
