My second surprise from Plattershare is a pack of organic Chia seeds from Lyva ,which is considered a Superfood rich in Omega 3 fatty acids, dietary fibre and antioxidants. These nutrition packed seeds have been enjoying their moment of spotlight in the health world since the last few years. They are considered to be one of the healthiest and versatile foods on planet that add easily to recipes. Chia seeds reduce food cravings and help you stay hydrated. Chia seeds are added to food as a topping to salads and porridge or added to smoothies, puddings, energy bars, breakfast cereals, yogurt, tortillas, bread etc. Infact couple of tablespoons can be tossed into baking recipes to add a little crunch and soaked chia seeds are an awesome vegan egg replacer too.

With fall recipes flooding the blogosphere, pumpkin purée lying in my refrigerator, one of my best buddies sending me 2 bottles of pumpkin pie spice from the U.S and Plattershare sending me these nutritious Chia I decided to make some Pumpkin Pie spice and Chia seeds Pikelets or small fluffy pancakes. These were a hit with my kids, got polished off in minutes and were super healthy too. What more does a mother want? The chia acted like a egg replacer making them fluffy and the pumpkin pie spice gave a spicy kick to those miniature pancakes. You can make pumpkin pie spice at home by following the recipe on the pic below. I added half wheat flour to the Pikelets recipe to make it more healthy.

Ingredients

Instructions
  1. Sift the flour, wheat flour and baking powder in a bowl and add rest of the dry ingredie to it. Make a well in the centre.
  2. Now add the pumpkin purxe9e, milk, vinegar to the dry ingredients and mix well with a hand whisk. Don't over mix, if the batter is too thick add a little milk.
  3. Let the mix sit for 10 mins for the Chia seeds to work its magic.
  4. Meanwhile heat a non stick frying pan and over medium low heat brush melted butter or oil and drop tablespoons of the batter into the pan.
  5. Allow room for the Pikelets to spread, you can make 5-6 Pikelets on the pan together.
  6. Cook the Pikelets till small bubbles appear on the surface and its golden brown underneath.
  7. Turn them over and cook on the other side. Repeat the process with the remaining batter.
  8. Serve hot with jam, maple syrup, honey or pancake syrup , with fruits or just as it is.
