Gingerbread Man Linzer Cookies
 Here is a recipe of Easy Austrian Linzer Cookies or Almond wafer Cookies filled with Jam in the shape of Gingerbread man,a hit with kids as well as adults!

  1. Toast the almonds in a preheated oven of 180 deg C for 8 – 10 minutes and once cooled process them to a fine powder in a food processor with 1 tbsp sugar from the 1/3 cup sugar mentioned.
  2. In a bowl mix the flour, cinnamon, lemon zest and salt and keep aside.
  3. Beat the butter and remaining sugar with a hand mixer till light and fluffy.
  4. Add the vanilla extract and the egg yolks and beat.
  5. Beat in the almond powder and the flour mix till a dough is formed.
  6. Wrap the dough in a cling film and refrigerate till firm or for 1 hour.
  7. Preheat the oven to 180 deg C and grease a cookie sheet or line with butter paper.
  8. In a lightly floured surface roll out the dough till 1/4 inch thick and with a gingerbread man cookie cutter cut out the shapes and lay it on the cookie sheet.
  9. Take a small heart shaped cookie cutter and cut out centers from the half of the cookies on the sheet.
  10. Bake for 10 -12 minutes or till the edges turn light brown.
  11. Repeat the process with the rest of the dough till the dough finishes.
  12. Once the cookies are cooled dust the cookies with the heart cut outs with some icing sugar .
  13. Whip your choice of jam with a small whisk and apply a thin layer of jam on the full cookies. Place the cut out cookies on the full cookies and gently sandwich them together.
  14. Using a small spoon or piping bag fill the cut out with a little more jam.
  15. If you want the cookies to be crisp then assemble them the day of serving. Assembled cookies can be kept in the refrigerator in an airtight container for a few days.
