  1. Soak the Sago pearls in water for 30 minutes and add water just to cover the sago for it to soak, otherwise it becomes gooey and mushy while cooking because of the starch in the sago.
  2. Now cook the sago in 2-3 cups of boiling water for 10 minutes or till the pearls look translucent.Switch off the flame and cover it for 10 minutes.
  3. Drain the excess water and wash the cooked sago in a strainer under cold water,that way the excess starch gets washed away and you are left with translucent,blossomed pearls.Store in the fridge till use.
  4. In a mixer jar take the mango purxe9e,sweet condensed milk,coconut milk and the cardamom powder ,grind to a smooth paste.
  5. Add the chilled Sago pearls to the paste leaving a little for garnish and mix gently.
  6. Pour in small bowls or glasses and chill covered with a cling film for 4-5 hours.
  7. Serve garnished with chopped mango, few sago pearls and mint leaves.
Recipe Notes

A few things to keep in mind while making this….adjust the Sweet condensed milk according to your taste of sweetness and the sweetness of the mangoes used. Instead of Condensed milk, reduced milk and sugar can be added.Some people don’t like the taste of coconut milk, Almond milk or full fat milk at room temperature can be used in lieu of that.
