In a pan heat the olive oil, add chopped garlic and onion and sauté till they turn transparent.
Add the spinach and sun dried tomatoes and sauté for a few seconds.Add the Mushrooms and cherry tomatoes ,sauté till they get half cooked .
Add the salt,pepper and dried mixed herbs to the veggies,mix and add the pasta.
In a separate bowl beat the egg, milk and little salt till the mixture becomes nice and airy.
Pour the egg mix into the pan distributing it equally through out the pan, sprinkle the grated cheese , cover it and cook it on low flame for 10 minutes.
Check if the top layer is cooked and the egg looks set. If you want a brown crust then slide the Frittata carefully on to a plate and flip it back into the pan with the top side facing down , let it brown for 3-4 minutes.
Cut the Frittata into wedges and serve with bread.
