Steamed Caramel Bread Pudding
A simple, easy, steamed Caramel bread pudding with eggs, which can be prepared without an oven,in a pressure cooker or a steamer .

  1. Heat the milk in a pan till it’s bubbling hot and switch off the flame.
  2. Add the sugar to the milk and mix leaving 1 tbsp aside for the caramelisation.
  3. Soak the bread slices in hot milk and let it cool for 15 to 20 minutes or till the mix cools completely.
  4. Now add the egg and the vanilla and whisk with a electric beater till everything gets incorporated well.
  5. In a 6 inch round baking tin take the rest of the sugar and start melting it on the stove top in medium flame.When the sugar turns golden brown and starts bubbling lift the pan with a pair of tongs and tilt it so that the Caramel coats the sides of the pan evenly. 1-2 tsp water can also be added to the sugar.
  6. Now pour the bread milk egg mixture into the baking pan, cover with aluminum foil,poke some holes in it for steam vents and steam it in a steamer or pressure cooker for 30- 35 minutes.
  7. For a pressure cooker add 2 cups of water, place a trivet, place the pudding pan on it making sure the base of the pan should not be submerged more than 1 inch. Close the lid tightly, remove the whistle weight and steam for 30 -35 minutes on low medium flame or till a toothpick inserted comes out clean.
  8. Cool and then refrigerate the pudding for 2 hours and then unmould it to get neat slices.
  9. I steamed it in my steamer which facilitates the boiling of water in the lower deck. You can steam in a big deep pan with a lid on if you don’t have a pressure cooker.
Recipe Notes
  • If you like more Caramel in the pudding add 2 tablespoons of sugar with 2 – 3 teaspoons of water and caramelise till golden brown.
  • Dont caramelise on a high flame as the sugar gets burnt and will taste bitter.
  • If you use sandwich sized slices of bread then add 1 cup more milk .
  • Nutmeg and Cinnamon can also be used to impart flavour to the pudding.
