Savoury Cheddar Sables with Sesame and Nigella Seeds

Sables are classic French butter cookies 🍪 which originated in Normandy in France. The term “Sables” means Sand in French due to the  sandy and crumbly texture of these cookies. The traditional shape of these delicate cookies are round with fluted edges and butter is what gives them a wonderful flavour.

Savoury cookies are just the thing for a cocktail or nibbles party and these are a delight to serve with your cheese platter or as canapés or aperitifs. Rich, crumbly and delicious these easy to whip up cookies will certainly whet your appetite. The addition of mustard gives a nice kick to the biscuits and the sprinkle of sesame and nigella seeds impart a mild, nutty onion flavour to them. Parmesan and Cheddar cheese both can be used in equal quantities instead of only Cheddar.But Parmesan not being a hot favourite in my family I used only Cheddar.

The Nigella seeds go by many names… Kalonji in India, Charnushka in US. They are also called Onion seeds or Black Caraway or Black Cumin or Roman Coriander but they have no relationship to these apart from flavour and are very much their own spice. It is one of the spices used in Paanch Phoron or Pancha Phutana or the five spice blend used for tempering in the eastern part of India.These seeds are hard and crunchy with a mild, nutty onion flavour, mostly used on flatbreads in the Middle East. They are normally sprinkled on salads, vegetable dishes, dals and savouries after a small roast in the skillet which helps to bring out its flavour.

Apart from the flavour and aroma the tiny black seeds comes with a plethora of health benefits. It keeps your heart healthy, cures breathing problems, lubricates your joints, has anti carcinogenic properties and cures acne too! Ingredients

Instructions
  1. Cut the cold butter into cubes.
  2. Shift the all purpose flour ina deep bowl and add the cubed butter to it.
  3. Rub the butter into the flour with the tip of your fingers till well incorporated and the mixture resembles breadcrumbs.
  4. Add the mustard powder, grated cheese and the Nigella seeds to the flour and knead into a dough.Do not apply too much pressure while kneading.
  5. Cover the dough with a cling film and refrigerate for 1-2 hours.
  6. After 1 hour divide dough into 2 equal halves, wait for 10 minutes for the dough to soften before rolling out.
  7. Roll out the dough into 3-5 mm thick discs, cut out rounds with a fluted cookie cutter,place them on greased and lined cookie trays, sprinkle some sesame and Nigella seeds on them and press gently and chill them for 15 mins in the fridge.
  8. Bake in a preheated oven at 180 degrees C for 15-17 minutes.
