  1. Wash and soak the lobia for 3-4 hours or overnight.
  2. Pressure cook the lobia for 10 minutes or till boiled with a little salt.
  3. Meanwhile chop the onion, tomatoes, cucumber, green chillies and coriander.
  4. Strain the boiled lobia (use the lobia water to knead your chapati dough or just use it in your daal) in a bowl .
  5. Add all the chopped veggies, chutneys, lemon juice and the chaat masala. Add less salt if you are using chaat masala to season it.
  6. Serve sprinkled with chopped coriander and enjoy.
