Sabudana Shakarkandi Gulaab Kheer/Sago Sweet Potato Rose Pudding
A delectable Kheer or Milk pudding which is delicious yet light on stomach making the Navratri fasts a feast for all !

  1. Wash and soak the sago or Sabudana in enough water barely covering the Sabudana.
  2. Boil the milk in a heavy bottomed pan till it becomes half in quantity making sure to keep stirring in between.
  3. Meanwhile grate the sweet potato or shakarkand and fry in 1 tsp of ghee till its cooked.
  4. When the milk reduces to half its quantity add the soaked sago pearls to it, draining the water properly.
  5. Boil in low flame till the sago is cooked and translucent.
  6. Now add the sugar, Gulkand, cardamom powder and rose water and cook for 4-5minutes.
  7. Finally add the grated, fried sweet potato or shakarkand and cook for 3-4 minutes.
  8. Switch off and serve chilled garnished with nuts and rose petals.
