Thinking of making a refreshing salad to make for Christmas to go with the menu of your feast? Then this is the perfect accompaniment to your dinner ..vibrantly beautiful, flavour packed, easy and delicious.

Apple, Cheddar, Pomegranates, Cranberries and Almonds on a bed of lettuce and drizzled with honey Apple cider vinaigrette….so many wonderful textures and flavours in every bite. The juicy apples, salty cheese, chewy dried cranberries with the crunch of the lettuce pomegranate and Almonds, you cant help it but love it.

Instructions
  1. For the Salad , to a large bowl or platter, add all ingredients in the order listed and set aside. For the Honey-Apple Cider Vinaigrette, in a small glass jar or container with a lid, add all ingredients, put the lid on and shake vigorously until combined.
  2. Taste the vinaigrette and tweak as necessary to taste.
  3. Drizzle over salad, toss to combine, and serve immediately. The extra dressing can be kept in the fridge in an airtight container for a week.
